HOMEMADE CARAMEL CORN WITH PECANS
1. cup margarine or butter
2. 2 cups packed light brown sugar
3. 1/2 tsp. salt
4. 1/4 cup water
5. 1 tsp. baking soda
6. 3 bags of popped corn
Melt margarine in 2-quart saucepan. Add brown sugar, salt, corn syrup and water. Heat to boiling. Boil for 5 minutes, watching carefully so sauce does not boil over. Remove from heat and add baking soda; stir well.
Pour over popped corn and stir until well coated. Place on 2 cookie sheets and bake at 250 degrees for 40 minutes, stirring occasionally. Bake both batches at the same time using lower and middle racks in oven. Take caramel corn off cookie sheets immediately after removing from oven
